Warm lentil and roasted pepper salad
Canned lentils make this a short preparation rather than an afternoon project. The warm dressing helps distribute mustard and lemon through the lentils, while roasted peppers add sweetness and color.

Warm lentil and roasted pepper salad
Ingredients
How to make it
- Heat oil in a pan and cook onion gently for 4–5 minutes until softened.
- Add lentils and peppers and warm through for about 4 minutes, stirring. Add a spoon of water if the pan becomes dry.
- Whisk mustard and lemon juice, then fold into the warm lentils off the heat.
- Add parsley and season. Divide between bowls and serve with bread if desired.
Make it work in your kitchen
Drain jarred peppers thoroughly so the dressing does not become watery. If using home-cooked lentils, they should be tender but still hold their shape. This recipe also works as a side dish in smaller portions. Check mustard labels for allergens and keep any leftovers promptly chilled.
